Daniel Angerer, a New York chef and restaurant owner, is “stirring” controversy by offering a recipe of breast milk cheese. On his blog, Daniel Angerer has posted his recipe of maple caramelized pumpkin encrusted cheese.  The recipe includes 4 cups of breast milk, rennet, salt and yogurt.

At his restaurant named Klee, the breast milk is being supplied by his wife and restaurant co-owner Lori Mason.  In the blog, Angerer explains that they are fortunate to have an over abundance of breast milk, and have recently run out of room in their freezer.  He further mentions that the idea to create the cheese became a realistic alternative to simply throwing out the excess breast milk.

Some customers at his restaurant have requested for the cheese, however he has offered it at no price.  Angerer has stated that he has absolutely no intent to sell the cheese at his restaurant.

The couple has received several complaints about the breast milk cheese, and debates across the city are occurring widely over the topic.

City officials have recently told the restaurant to keep the breast milk cheese experiment away from customers.  They have stated that the “cheese” is not for public consumption, including it being sold or simply given away.

Angerer has also explained the taste of the cheese to the many people that have read the blog.  The flavour, according to Angerer, has ranged from salty and sweet, to even a little spicy.  His explanation for the taste difference is simply based on what his wife has eaten recently.

DAMN. Can’t you just have the excess milk certified by La Leche League and sent to children whose mothers cannot produce healthy milk? If you can’t, then it shouldn’t be CHEESE, either. Ew.

  2. Kimb says:

OK–My first reaction was ew. But really, why is milk from the udders of a cow any less “ew”?

This New York chef is offering her “Chicken Compote Surprise” recipe on her new YouTube channel: http://YouTube.com/CookingWithClaudia. No breast milk in this recipe, though (although you could add some for flavor).

  4. Shelley Ferguson says:

Four cups is a lot of breast milk, people. Especially if this is a young baby.

  5. Philip D'Avanzo says:

Where do I go to try some of this of so delicious breast milk? I haven’t had any since I was a baby.
