Cat Poo Coffee the next big thing?

It seem that something euphemistically known as “cat poo” coffee for $30 a cup is becoming quite the rage in New York City. The coffee, Kopi Luwak is supposedly of superior quality compaired to regular (non-defecated) coffee and it tastes less bitter. The acids from the cat’s stomach removes the bite and gives the coffee a “smoother” taste. The process of how the coffee is made is pretty unique.
The civet initially ingests coffee berries. The “Civet” which possesses cat-like features is technically not a cat . The coffee Kopi Luwak is mostly produced in Bali, Sumatra, Java, Indonesia, and the Philipines. The coffee has gained popularity in New York in the last few years. The berries ie… coffee beans go through the cat’s digestive tract where the proteolytic enzymes penetrate the beans. The beans retain their shape after the cat “poops” them out. After defecation ,the beans are washed, sun-dried, and roasted. This apparently yields to a special Intriguing mellow taste.
I am a serious coffee drinker so I am looking forward to having a sip to determine weather its just another gimmick or perhaps the newest thing to hit the culinary melting pot that is New York since the proverbial sliced bread. As a coffee connoisseur, I am not sure I am comfortable with drinking something that came out of a cat’s butt and the $30 price tag is a bit out of my league ,but given the opportunity I am hoping its simply purrrrrrrrrrrrrfect.
